SHRIMP TZATZIKI BRUSCHETTA

Our Managing Editor Emani Fung shares her sister’s creative spin on a classic Mediterranean hors d'oeuvre

If there’s one thing that got me through the crazy year that was 2020, it was my sister Ivorine’s cooking. During quarantine, Ivorine would experiment with what seemed like a never-ending list of new recipes. While I couldn’t offer much culinary assistance to these exploits (to this day, I still struggle to even boil water), I was always ready to provide a pair of fresh tastebuds. Tasting was a job I did particularly well.

During this period, Ivorine would often go through different ingredient fads. One week, every meal would involve shiitake mushrooms. The next, it was shishito peppers. It was while she was in her tzatziki phase that this specific dish came to be. Shrimp Tzatziki Bruschetta is the perfect combination of some of our favorite ingredients: seafood, warm bread, and, of course, tzatziki, the creamy Mediterranean dip made with Greek yoghurt, cucumbers, and fresh dill.

These hors d'oeuvres are zesty, buttery, and packed full of flavor. They’re the perfect snack for a breezy summer day, and a great way to show your dinner guests how creative and cultured you are.

Ingredients

Serving: 4pcs

Total Time: 20 mins

  • 1 Large French Baguette

  • Shrimp deveined

  • Horseradish (optional)

  • Diced Tomatoes

  • Olive Oil

  • Red Onions

  • Garlic

  • Red Pepper Flakes

  • Salt and pepper

  • Butter

  • Fresh Basil and parsley Lemon Juice

  • Bell Peppers

  • Tzatziki Sauce

  1. Toast sliced bread in oven on 400 for about 10 minutes. Top with garlic butter (butter, garlic, salt and pepper).

  2. In a large cast iron skillet, sauté shrimp with garlic and olive oil. Add salt, pepper, red chili flakes to taste.

  3. Mix diced tomatoes, lemon juice, red onions; horseradish, peppers, fresh basil and parsley in a bowl. Drizzle with olive oil, and salt and pepper to taste.

  4. Spread a generous layer of tzatziki sauce on toasted bread. Top with diced tomato blend.

  5. Add a few pieces of sautéed shrimp to each slice. Garnish with basil, and parsley.
